Arni Souvlakia (shish-kabob) Recipe

Ingredients
  • 1/2 ts Black pepper
  • 12 Smallish round tomatoes
  • 3/4 ts Sea salt
  • 1/2 c White wine
  • 1 lg Leek; green part removed & finely sliced
  • 3 c Steamed or boiled white or brown rice
  • 1 tb Mint; sliced
  • 1/2 c Parsley; sliced
  • 4 tb Olive oil
  • 1 lg Onion; sliced finely
  • 1 c Vegetable stock
  • 3/4 c Currants
  • 1/2 c Toasted pine nuts

Directions
  • Step #1 With a sharp knife, slice the tops off the tomatoes, & scoop out as much flesh as possible without damaging the exterior of the tomato.
  • Step #2 Chop the tomato pulp finely.
  • Step #3 Heat the olive oil & cook the sliced onion until slightly golden.
  • Step #4 Add the rice, tomato pulp, parsley, mint, nuts, currants, salt and pepper & saute until the mixture is hot & well flavoured.
  • Step #5 Fill each tomato with the rice mixture & replace the tops of the tomatoes.
  • Step #6 bake this at 180c.
  • Step #7 for 15 mins.
  • Step #8 Spoon the liquid over the tomatoes and serve.
