Souvlaki Aaa
Ingredients
1/2 ts Black pepper
12 Smallish round tomatoes
3/4 ts Sea salt
1/2 c White wine
1 lg Leek; green part removed & finely sliced
3 c Steamed or boiled white or brown rice
1 tb Mint; sliced
1/2 c Parsley; sliced
4 tb Olive oil
1 lg Onion; sliced finely
1 c Vegetable stock
3/4 c Currants
1/2 c Toasted pine nuts
Directions
Step #1 With a sharp knife, slice the tops off the tomatoes, & scoop out as much flesh as possible without damaging the exterior of the tomato.
Step #2 Chop the tomato pulp finely.
Step #3 Heat the olive oil & cook the sliced onion until slightly golden.
Step #4 Add the rice, tomato pulp, parsley, mint, nuts, currants, salt and pepper & saute until the mixture is hot & well flavoured.
Step #5 Fill each tomato with the rice mixture & replace the tops of the tomatoes.
Step #6 bake this at 180c.
Step #7 for 15 mins.
Step #8 Spoon the liquid over the tomatoes and serve.
