Banana Pudding Recipe

Ingredients
  • 1 ds Salt
  • 4 lg Egg Whites
  • 3 c Sliced Banana; Divided
  • 2 lg Egg Yolks
  • 2 ts Vanilla Extract
  • 1/4 c Sugar
  • 1/3 c All-Purpose Flour
  • 14 oz Fat-Free Sweetened Condensed Milk
  • 2 1/2 c 1% Low-Fat Milk

Directions
  • Step #1 Prehat oven to 325?.
  • Step #2 mix flour & salt in a medium saucepan.
  • Step #3 slowly add milks & yolks; stir well.
  • Step #4 Cook over med-heat/flame 8 mins or until thick, stirring constantly.
  • Step #5 remove this from heat; stir in vanilla.
  • Step #6 Arrange 1 c banana slices in bottom of a 2-quart baking dish.
  • Step #7 Spoon one-third of pudding mixture over banana.
  • Step #8 Arrang 15 wafers on top of pudding.
  • Step #9 Repeat layers twice, arranging the last 15 wafers around the edge of the dish.
  • Step #10 Push cookies into pudding.
  • Step #11 Beat egg whites at high speed of a mixer until foamy.
  • Step #12 slowly add sugar, 1 tbsp at a time, beating until stiff peaks form.
  • Step #13 Spread meringue evenly over pudding, sealing to the edge of dish.
  • Step #14 bake this at 325? for 25 mins or until golden.
  • Step #15 Note: Banana pudding may be a bit soppy when you first remove it from the oven.
  • Step #16 Let it cool at least 30 mins before serving.
