Ingredients
  • 8 oz White button mushrooms; sliced
  • 4 c Loosely packed fresh spinach
  • 2 Cloves garlic; minced
  • 1 tb Canola oil
  • 1 c sliced onion
  • 2 ts Asian sesame oil
  • 4 oz Shiitake mushrooms; sliced
  • 1 c Pearled barley
  • 2 tb Tamari
  • 1/8 ts Cayenne pepper
  • 3 c Water or vegetable stock

Directions
  • Step #1 4 SERVINGS DAIRY-FREE In this substantial dish, other mushroom varieties (such as cremini & portobello) can be used instead of the shiitakes if you wish.
  • Step #2 Add barley & water to medium saucepan.
  • Step #3 Cover & let simmer over medium-low heat until tender, about 1 hr.

  • Step #5 Add onion and cook, until browned, stirring every once in awhile, 7 mins.

  • Step #8 Add spinach & barley & cook, until barley is heated through & spinach is wilted, stirring often, 3 to 5 mins.
  • Step #9 Spice up this with tamari, sesame oil & cayenne pepper.
