Ingredients
2 Cloves garlic; minced
1/2 ts Salt
1/4 c sliced fresh parsley
1/2 c sliced onions
3 c Cooked barley
1/4 ts Pepper
4 sm Green or red bell peppers
1 tb Vegetable oil
1 1/2 c sliced tomatoes
1/4 c Snipped fresh dill
Directions
Step #1 1.
Step #2 preheat your trusty oven to 375 degrees.
Step #3 2.
Step #4 Cut off top of peppers, then remove seeds & pith.
Step #5 Blanch in boiling water 4 mins; drain.
Step #6 3.
Step #7 In a medium skillet, heat the oil over medium-high heat.
Step #8 Add the onions & garlic; cook, stirring, until softened, about 2 mins.
Step #9 Add the tomatoes, dill, & parsley.
Step #10 Cook, stirring until tomatoes are softened, about 3 mins.
Step #11 stir in the the barley, salt, & pepper.
Step #12 Spoon 1/4 of the barley mixture into each of the prepared pepper shells.
Step #13 4.
Step #14 Bake 20 mins, or until filling is heated through.
Step #15 VARIATION: Add 1/4 c grated Parmesan cheese when you add the barley.
