Barrah Kebab Recipe

Ingredients
  • 2 Cloves garlic; minced
  • 1/2 ts Salt
  • 1/4 c sliced fresh parsley
  • 1/2 c sliced onions
  • 3 c Cooked barley
  • 1/4 ts Pepper
  • 4 sm Green or red bell peppers
  • 1 tb Vegetable oil
  • 1 1/2 c sliced tomatoes
  • 1/4 c Snipped fresh dill

Directions
  • Step #1 1.
  • Step #2 preheat your trusty oven to 375 degrees.
  • Step #3 2.
  • Step #4 Cut off top of peppers, then remove seeds & pith.
  • Step #5 Blanch in boiling water 4 mins; drain.
  • Step #6 3.
  • Step #7 In a medium skillet, heat the oil over medium-high heat.
  • Step #8 Add the onions & garlic; cook, stirring, until softened, about 2 mins.
  • Step #9 Add the tomatoes, dill, & parsley.
  • Step #10 Cook, stirring until tomatoes are softened, about 3 mins.
  • Step #11 stir in the the barley, salt, & pepper.
  • Step #12 Spoon 1/4 of the barley mixture into each of the prepared pepper shells.

  • Step #14 Bake 20 mins, or until filling is heated through.
  • Step #15 VARIATION: Add 1/4 c grated Parmesan cheese when you add the barley.
