Basil Ratatouille Recipe

Ingredients
  • Lemon sorbet or vanilla ice cream for serving
  • 1/4 c Sugar
  • 2 tb Lemon juice
  • 3/4 c Water
  • 2 Oranges
  • 1 Vanilla bean; split
  • 6 Leaves fresh basil; plus extra for garnish
  • 1 sm Grapefruit

Directions
  • Step #1 Using a very sharp knife, peel the grapefruit & oranges, discarding the skins (be sure to remove all of the white pith).
  • Step #2 Slice the fruit into 1/4-inch rounds, removing pits as you go.
  • Step #3 Set aside in a medium non-reactive bowl.
  • Step #4 In a medium non-reactive pan, mix the water, sugar, lemon juice.
  • Step #5 Scrape the seeds from the vanilla bean & add the seeds & bean to the liquid.
  • Step #6 Bring to a gentle simmer for 5 mins.
  • Step #7 Thinly slice 6 of the basil leaves & toss over the citrus rounds.
  • Step #8 Remove liquid from heat & strain over the citrus & basil.
  • Step #9 put in the fridge until chilled.
  • Step #10 Serve the chilled fruit & liquid over Lemon Sorbet or Vanilla Ice Cream.
  • Step #11 Garnish with fresh basil.
