Black-eyed Pea Curry Recipe

Ingredients
  • 1/4 ts Salt
  • 1/3 c Finely sliced cooked smoked ham or chicken
  • 1/4 c Extra-virgin olive oil
  • 1 c Torn arugula leaves
  • Freshly ground black pepper
  • 1 Jar Roasted red bell peppers -;
  • 1 md Garlic clove; coarsely sliced
  • 2 c Cooked white rice

  • 1 cn Black-eyed peas - ; drained, rinsed
  • 2 tb Balsamic vinegar

Directions
  • Step #1 To prepare dressing: Drain peppers; discard liquid.
  • Step #2 Puree peppers with garlic in a food processor/blender Add vinegar, olive oil, salt & pepper to taste; mix well.
  • Step #3 To prepare salad: mix rice, black-eyed peas & ham.
  • Step #4 stir in the dressing with a spatula.
  • Step #5 (You can make this several hrs ahead; store this in the refrigerator, but return to room temperature 1 hr before serving.
  • Step #6 ) Just before serving, stir in the arugula.
  • Step #7 Yields 6 side-dish servings.
