Black-eyed Pea, Pineapple And Red Pepper Salad Recipe

Ingredients
  • 2/3 c Dried black-eyed peas
  • 2 Scallions; sliced
  • 1/2 ts Ground cumin
  • 8 c Salted water
  • Salt & pepper to taste
  • 4 ts Fresh lemon juice
  • 1 lg Firm-ripe peach; peeled and cut into 1/2-inch pieces
  • 1 bn Watercress; tough stems discarded, the rest washed well, spun dry , and sliced
  • 1 Celery rib; sliced fine

Directions
  • Step #1 In a saucepan bring water & peas to a boil & let simmer 20 mins, or until tender.
  • Step #2 Drain peas in a colander & rinse under cold water to cool.
  • Step #3 Drain peas well & in a large bowl toss with remaining ingredients & salt & pepper to taste.
  • Step #4 Salad may be made 2 hrs ahead & chilled, covered.
  • Step #5 Yield: 4 servings.
