Black-eyed Peas Recipe

Ingredients
  • 1/2 c Olive oil
  • 1 Jar roasted bell peppers; drained, sliced
  • 4 cn Black-eyed peas; rinsed, well drained
  • 4 Jalapeno chilies; seeded, sliced
  • Ornamental kale
  • 2/3 c Minced fresh cilantro
  • 1 sm Red onion; minced
  • 1 1/2 c Minced celery
  • 4 c sliced peeled cored fresh pineapple;
  • 1/4 c Country-style Dijon mustard
  • 2 tb Cider vinegar
  • Fresh cilantro sprigs

Directions
  • Step #1 mix first 7 ingredients in large bowl.
  • Step #2 Whisk Dijon mustard and cider vinegar in small bowl.
  • Step #3 slowly whisk in olive oil.
  • Step #4 Add to salad & toss to coat.
  • Step #5 Spice up to taste with salt & pepper.
  • Step #6 (Can be prepared 1 day ahead.
  • Step #7 Cover & put in the fridge.
  • Step #8 ) Line large bowl with kale.
  • Step #9 Fill with salad.
  • Step #10 Garnish salad with cilantro sprigs & serve.
  • Step #11 Serves 12.
