Step #1 Note 1: May be found in Russian or Jewish markets or specialty or health-food stores.
Step #2 Note 2: Black caviar is best with these.
Step #3 Black lumpfish caviar from Iceland or Denmark is just fine if you do not wish to spend a fortune on Russian caviar.
Step #4 Scald the milk & cool to warm (105 degrees).
Step #5 Put the yeast in the water & add the sugar.
Step #6 Let sit for 5 mins, then stir this to dissolve the yeast.
Step #7 In an electric mixer mix the milk, salt, yeast mixture, the egg yolks only, both flours, sour cream & melted butter.
Step #8 Mix thoroughly.
Step #9 Beat the egg whites until they form soft peaks & carefully fold into the batter.
Step #10 Allow to rise for 30 mins.
Step #11 stir in the the extra milk.
Step #12 Heat an electric non-stick frying pan to 400 degrees.
Step #13 Brush the pan with a bit of butter & fry the pancakes using 3 tbsps of batter for each.
Step #14 They should be about 3 to 4-inches in diameter.
Step #15 cook this until golden & turn.
Step #16 Keep blinis covered in a preheated 200 degree oven until serving.
Step #17 Note: You can cook these ahead of time & put in the fridge them in sealed plastic bags.
Step #18 Reheat them on a medium-hot griddle just before serving.
Step #19 To serve blinis: Place the recommended garnishes alongside the blinis.
Step #20 Each person may add a bit of the garnishes to the blinis.
Step #21 This makes a great first course.
Step #22 This recipe makes about 3 1/2 dozen blinis.
