Braised Loin Of Lamb With Yoghurt And Coriander Recipe

Ingredients
  • 1 lb Lambs liver; sliced
  • 4 fl Stout
  • Fresh sliced parsley
  • 4 fl Water
  • Salt & freshly milled black pepper
  • 4 tb Vegetable oil
  • 4 oz Streaky bacon; cut into small pieces
  • Fresh sliced coriander
  • 4 oz Celery; sliced
  • 4 oz Carrot; sliced
  • 1 oz Plain flour
  • 8 Floz chicken stock
  • 2 oz Red & green peppers
  • 2 oz Mushrooms

Directions
  • Step #1 Heat the oil in a large casserole pot.
  • Step #2 Spice up flour with sliced parsley & coriander & a little salt & pepper.
  • Step #3 Coat liver slices in flour & quickly brown in hot fat to seal in flavour.
  • Step #4 As soon as both sides are browned, remove & set aside.
  • Step #5 Add sliced carrots, mushrooms, celery, red & green peppers & bacon & mix together well.
  • Step #6 Add the stout & water to the vegetables.
  • Step #7 Then pour in the stock, place liver slices back into the casserole dish & seal in flavours with lid.
  • Step #8 place this in the oven for about 20 mins on a medium heat at 200C.
  • Step #9 Remove casserole & using a slotted spoon take out liver and place onto warmed serving dish.
  • Step #10 Heat sauce to slightly reduce it, add this to the vegetables to thicken sauce As soon as the liquid has thickened, spoon sauce over the liver, quickly mix together, then using a tbsp of flour and butter, garnish with fresh coriander & serve as soon as possible.
