Brazilian Plantains With Leafy Greens And Chicken Recipe

Ingredients
  • 2 c sliced onions
  • 1 Jalapeno pepper; stemmed, seeded,
  • 3 tb Vegetable oil
  • 1/4 c Fresh lime juice
  • & sliced
  • 1 Green bell pepper; stemmed, seeded,
  • Salt; to taste
  • Freshly-ground black pepper; to taste
  • 1 tb Minced garlic
  • 2 1/2 lb Boneless fillets of any firm whitefish
  • 1/2 c Fish stock or water
  • 1 Red bell pepper; stemmed, seeded,
  • 3 c Canned tomatoes; coarsely sliced
  • 1/4 c sliced fresh cilantro
  • & sliced
  • & sliced
  • & tails removed
  • 1/2 lb Small shrimp; peeled, deveined,

Directions
  • Step #1 Cut the fillets into bite-size pieces.
  • Step #2 Cut the shrimp in half lengthwise.
  • Step #3 place this in a shallow, nonreactive bowl & set aside.
  • Step #4 mix the tomatoes, onion, oil, lime juice, chile, garlic, cilantro, salt & pepper in a food processor/blender fitted with the metal blade.
  • Step #5 Process until smooth.
  • Step #6 Pour over fish & allow to marinate for 1 hr.
  • Step #7 Place marinated fish in a heavy saucepan over med-heat/flame.
  • Step #8 Add the bell peppers & fish stock.
  • Step #9 Bring to a boil.
  • Step #10 Lower heat and simmer for about 10 mins or until fish is cooked through.
  • Step #11 Serve as soon as possible with rice, if desired.
  • Step #12 This recipe yields 6 servings.
