Bread Pudding With Warm Banana Maple Sauce Recipe

Ingredients
  • 3 Egg yolks
  • 7 c Brioche or egg-bread cubes -;
  • 1 ts Cornstarch
  • 1/2 c Sugar
  • 1 ts Vanilla extract
  • 2 tb Sugar
  • 2 c Whole milk
  • 1 ts Ground cinnamon
  • 2 lg Egg yolks
  • 2 tb Cream Sherry
  • 1/2 c Cream Sherry
  • 1/2 c Dried currants
  • 3 lg Eggs
  • === SAUCE ===
  • 1 c Half-and-half

Directions
  • Step #1 Bring 1/2 c Sherry to boil in a heavy small saucepan.
  • Step #2 Add currants.
  • Step #3 remove this from heat.
  • Step #4 Cover & let this stand 15 mins to plump.
  • Step #5 Preheat oven to 325F degrees.
  • Step #6 Butter an 8-inch square glass baking dish.
  • Step #7 Whisk milk, eggs, sugar, yolks, vanilla & cinnamon in large bowl.
  • Step #8 Arrange half of bread on bottom of prepared dish.
  • Step #9 Spoon Sherry & currants over.
  • Step #10 Arrange remaining bread over.
  • Step #11 Pour egg mixture over all.
  • Step #12 Let stand 15 mins, pressing bread into egg mixture every once in awhile.
  • Step #13 Bake pudding until puffed & golden, about 1 hr 15 mins.
  • Step #14 Transfer to rack.
  • Step #15 Bring half-and-half to a simmer in heavy medium saucepan.
  • Step #16 Whisk yolks, sugar & cornstarch in medium bowl.
  • Step #17 slowly whisk in hot half-and-half.
  • Step #18 Return mixture to same saucepan.
  • Step #19 Stir over med-heat/flame until mixture thickens & leaves path on back of spoon, about 3 mins.
  • Step #20 Strain into bowl.
  • Step #21 stir in the Sherry.
  • Step #22 Serve pudding warm with warm sauce.
  • Step #23 This recipe yields 6 servings.
