Brown Rice And Vegetable Pie Recipe

Ingredients
  • 2 Cloves garlic; minced
  • 6 md Flour tortillas 8-inch
  • 1/2 ts Cumin
  • 11 oz Corn kernels; drained
  • 1 tb Vegetable oil
  • 6 oz Cheddar cheese; shredded, or 3/4-c shredded
  • 1/4 c Prepared salsa
  • 2 Green onions; thinly sliced
  • 1/4 c Plain nonfat yogurt
  • 1 md Onion; sliced
  • 3 c Cooked brown rice
  • 1 1/2 ts Chili powder
  • 16 oz Cooked black beans; approximately, drained and rinsed

Directions
  • Step #1 Heat oil in large skillet over medium-high heat until hot.
  • Step #2 Add onion, garlic, chili powder & cumin.
  • Step #3 Saute 3 to 5 mins until onion is tender.
  • Step #4 Add rice, beans & corn; cook, stirring 2 to 3 mins until mixture is thoroughly heated.
  • Step #5 remove this from heat.
  • Step #6 Spoon 1/2 c rice mixture down center of each tortilla.
  • Step #7 Top each with 2 tbsps cheese, 1 tbsp green onion & 1 tbsp yogurt; roll up, top this with 1 tbsp salsa.
  • Step #8 Makes 6 servings.
