Burritos/enchiladas Sm Recipe

Ingredients
  • 3 Ripe tomatoes; sliced thinly
  • 6 Spring onions; sliced finely
  • 1 Onion; sliced
  • 250 g Mild Cheddar cheese; grated finely
  • 500 g Frijoles Refritos; , recipe on site
  • 1 tb Cooking oil
  • 6 Wheat flour tortillas;
  • 12 tb Guacamole or Salcita;
  • 1 sm Lettuce; shredded finely

Directions
  • Step #1 Heat the tortillas wrapped in aluminium foil in the oven at 150 ?C/ 300F ?F/ Gas Mark 2 for 10 mins, just to make them pliable.
  • Step #2 Heat the oil & saut? the onion.
  • Step #3 Then add the beans & stir for about 5 mins until they are nice & hot.
  • Step #4 Put 2 tbsps in the centre of each tortilla, Sprinkle top with the lettuce & add tomato slices, spring onions & cheese.
  • Step #5 Fold it like a parcel & secure with one or more cocktail sticks.
  • Step #6 Put the Burritos in an oven-proof dish, cover them tightly with aluminium foil & heat them for 10 mins at 180 ?C/ 350 ?F/ Gas Mark 4.
  • Step #7 Before serving spoon over some Guacamole or Salcita (raw tomato sauce).
