Butterflied Turkey Breast With Orzo-currant Stuffing Recipe

Ingredients
  • 90 g Cream cheese
  • 1 Fresh chicken
  • 1 1/2 c Fresh breadcrumbs
  • --CHICKEN-----
  • 1/2 bn Spring onions
  • 1 ts Fresh or 1/2 tsp dried oregano
  • 1 tb Fresh parsley
  • 1 Clove garlic
  • 1 Lemon; Juice of
  • Grated rind of 1 lemon

Directions
  • Step #1 --POTATOES----- 1/2 kg Red potatoes 1 tb Clarified butter or virgin -olive oil 1/2 ts Paprika Fresh herbs Chicken: Cut the chicken straight down the backbone & cut the bone away from the flesh & discard.
  • Step #2 Turn it over & flatten the chicken using the heel of your hand.
  • Step #3 Mix all the stuffing ingredients together & place between the skin & the breast of the chicken.
  • Step #4 Skewer the chicken flat at the top & bottom & place onto the pre-heated barbecue stuffing side up & cover with lid.
  • Step #5 Cook for 1 1/2 hrs.
  • Step #6 Potatoes: Wash but do not peel potatoes.
  • Step #7 Slice thickly & toss in oil or butter.
  • Step #8 Spice up this with salt & pepper.
  • Step #9 Place on hot grill plate of barbecue & cook, turning often for 1/2 hr.
  • Step #10 Scatter over fresh herbs before serving.
