Step #1 --POTATOES----- 1/2 kg Red potatoes 1 tb Clarified butter or virgin -olive oil 1/2 ts Paprika Fresh herbs Chicken: Cut the chicken straight down the backbone & cut the bone away from the flesh & discard.
Step #2 Turn it over & flatten the chicken using the heel of your hand.
Step #3 Mix all the stuffing ingredients together & place between the skin & the breast of the chicken.
Step #4 Skewer the chicken flat at the top & bottom & place onto the pre-heated barbecue stuffing side up & cover with lid.
Step #5 Cook for 1 1/2 hrs.
Step #6 Potatoes: Wash but do not peel potatoes.
Step #7 Slice thickly & toss in oil or butter.
Step #8 Spice up this with salt & pepper.
Step #9 Place on hot grill plate of barbecue & cook, turning often for 1/2 hr.
Step #10 Scatter over fresh herbs before serving.
