Step #1 Marinate chuck roast in buttermilk, covered overnight in refrigerator.
Step #2 Next day, wipe meat dry with a paper towel, & Spice up with salt & pepper; brown meat in a Dutch Oven.
Step #3 Add onions, 1 c of buttermilk from the marinade, celery, carrots, & water to cover meatbsp.
Step #4 Place bay leaf, & bring up the sides; tie closed with a string, cloves & caraway seeds into a coffee filter, peppercorns, & place this into liquid.
Step #5 Cover Dutch Oven, & bake 2 1/2 to 3 hrs at 300F degrees, or until meat is tender; remove spice bag.
Step #6 Stir in sour cream & add together flour & water; bring to a boil, and add flour & water to thicken.
Step #7 Add sugar, & more salt & pepper to taste.
Step #8 Slice beef against the grain, & serve slices with gravy.
Step #9 Will serve 4 people.
Step #10 serve this with noodles, mashed or boiled potatoes.
