Buttermilk Scones Recipe

Ingredients
  • 1 Rib Celery; Sliced Thin
  • 1 Boneless Chuck Roast;
  • 2 ts Salt
  • 8 Whole Cloves
  • 2 ts Black Pepper
  • 10 Black Peppercorns
  • 1/2 c Sour Cream
  • 1/2 c Water
  • 1/2 Onion; Sliced Thin
  • 1 Carrot; Sliced Thin
  • 1/2 c Flour
  • 1 Bay Leaf
  • 2 ts Sugar
  • 2 c Buttermilk

Directions
  • Step #1 Marinate chuck roast in buttermilk, covered overnight in refrigerator.
  • Step #2 Next day, wipe meat dry with a paper towel, & Spice up with salt & pepper; brown meat in a Dutch Oven.
  • Step #3 Add onions, 1 c of buttermilk from the marinade, celery, carrots, & water to cover meatbsp.
  • Step #4 Place bay leaf, & bring up the sides; tie closed with a string, cloves & caraway seeds into a coffee filter, peppercorns, & place this into liquid.
  • Step #5 Cover Dutch Oven, & bake 2 1/2 to 3 hrs at 300F degrees, or until meat is tender; remove spice bag.
  • Step #6 Stir in sour cream & add together flour & water; bring to a boil, and add flour & water to thicken.
  • Step #7 Add sugar, & more salt & pepper to taste.
  • Step #8 Slice beef against the grain, & serve slices with gravy.
  • Step #9 Will serve 4 people.
  • Step #10 serve this with noodles, mashed or boiled potatoes.
