Ingredients
  • 1 sm Head cabbage; cut in large chunks
  • 3 Carrots; sliced
  • Salt & pepper; to taste
  • 1 lg Onion; sliced
  • 4 tb Fat-free sour cream
  • 3 Cloves garlic; minced
  • 1 1/2 ts Tamari soy sauce
  • 4 ts Ginger root; minced
  • Oriental flavored vegetable cooking spray
  • 1/2 c Vegetable stock
  • 6 md Red potatoes; unpeeled, cubed

Directions
  • Step #1 Spray large skillet with cooking spray; heat over med-heat/flame until hot.
  • Step #2 Add onion, carrots, & gingerroot; spray with cooking spray & saute until lightly browned, garlic, cabbage, potatoes, about 8 mins.
  • Step #3 Add stock & soy sauce & cook, covered, over med-heat/flame until vegetables are just tender, about 5 mins.
  • Step #4 Spice up to taste with salt & pepper.
  • Step #5 Spoon hash onto plates; top each serving with a tbsp of sour cream.
  • Step #6 Per serving: 212 Calories; 1g Fat (4% calories from fat); 7g Protein; 46g Carbohydrate; 3mg Cholesterol; 523mg Sodium.
