Cardamom Rice Recipe

Ingredients
  • 1 Envelope Active dry yeast -;
  • 3 Eggs; slightly beaten
  • 2 tb Warm water
  • 1 ts Ground cardamom
  • === DOUGH ===
  • 1/2 c Butter or margarine
  • 1/2 c Butter or margarine
  • === FILLING ===
  • 1/2 ts Ground cinnamon
  • 1/2 c Sugar
  • 1/4 c Raisins or currants
  • 2 tb Sugar
  • 3 c Sifted flour

Directions
  • Step #1 DOUGH: Sprinkle top yeast into warm water in small bowl; stir until dissolved.
  • Step #2 Cut butter into flour & sugar in large bowl with pastry mixer or fingers until mixture is crumbly.
  • Step #3 Make well in center of dry ingredients.
  • Step #4 Put eggs & yeast mixture in indentation & stir with wooden spoon until wet ingredients are incorporated & dough holds together.
  • Step #5 Knead several times until dough is smooth & satiny.
  • Step #6 Set dough aside to rest 10 mins.
  • Step #7 FILLING: Beat butter & sugar in small bowl until light & fluffy; beat in cardamom, cinnamon and raisins.
  • Step #8 Press 2/3 of dough onto bottom & about 1 inch up sides of 9-inch buttered springform pan.
  • Step #9 Spread filling evenly over dough.
  • Step #10 On lightly floured surface, roll remaining 1/3 of dough into about 13 strips about as thick as a little finger.
  • Step #11 Arrange lattice-fashion on top of filling, pressing firmly to dough at edge.
  • Step #12 Cover pan with towel or wax paper.
  • Step #13 Let rise in warm place, away from draft, until doubled in bulk, 1 to 1-1/2 hrs.
  • Step #14 bake this at 350 degrees until golden brown, about 40 mins.
  • Step #15 remove this from oven.
  • Step #16 Remove side of springform pan & cool bread on wire rack.
  • Step #17 Serve warm.
  • Step #18 Yields 8 servings.
