Carrageen Moss Pudding With Crushed Blueberries Recipe

Ingredients
  • 2 Eggs; separated
  • 1/2 oz Dried carrageen moss
  • 2 oz Sugar
  • 1 Orange; peel stripes only
  • 1 Vanilla pod; split
  • 17 fl Milk

Directions
  • Step #1 1 Wash the carrageen in warm water & soak for 5-10 mins.
  • Step #2 Place in a pan with the milk, vanilla pod & a few stripes of orange peel.
  • Step #3 2 Boil & let simmer carefully for 15-20 mins.
  • Step #4 Pass the milk through a fine mesh strainer, extracting all the gelatine from the carrageen.
  • Step #5 Whilst the liquid is still hot, whisk in the egg yolks & sugar.
  • Step #6 Cool slightly.
  • Step #7 3 Stiffly whisk the egg whites & fold into the mixture.
  • Step #8 Spoon into one large or individual small moulds & chill for at least 4-6 hrs.
