Cheesy Tuna And Macaroni Casserole Recipe

Ingredients
  • 3 cn Italian plum tomatoes; drained & sliced
  • 2 c Chicken broth
  • 1/3 c Grated Parmesan cheese
  • 1 1/2 c sliced onion
  • 1 lb Penne pasta; cooked and drained
  • 6 tb Olive oil; divided
  • 2 1/2 c Grated Havarti cheese
  • 1 ts Minced garlic
  • 1/2 c Sliced black olives
  • 2 ts Dried basil
  • 1 ts Dried crushed red pepper
  • 1/4 c Finely sliced fresh basil

Directions
  • Step #1 Heat 3 tbsps oil in large heavy Dutch oven.
  • Step #2 Saute onion and garlic & in oil about 5 mins.
  • Step #3 Mix in tomatoes, dried basil and red pepper.
  • Step #4 Bring to a boil & add broth.
  • Step #5 Reduce heat to medium and simmer until thickened & reduced to 6 c, stirring every once in awhile, about an hr.
  • Step #6 Spice up this with salt & pepper.
  • Step #7 Toss pasta with remaining oil.
  • Step #8 pour the sauce over & toss to mix.
  • Step #9 Mix in Havarti cheese.
  • Step #10 Transfer to 9 x 13 inch baking dish.
  • Step #11 Sprinkle top with olives and Parmesan.
  • Step #12 bake this at 375 degrees until heated through, about 30 mins.
  • Step #13 Sprinkle top with basil.
  • Step #14 Yield: 4 servings.
