Cherry-yogurt Parfaits Recipe

Ingredients
  • 2 ts Fresh lemon juice
  • 3 tb Salt
  • 1/2 c Chilled unsalted butter; cut into pieces
  • 8 c Pitted fresh sweet cherries; or frozen
  • 3 ts Grated orange peal
  • 3/4 c Plus 3 tbsps sugar
  • 1 lg Egg
  • 1 3/4 c All purpose flour

Directions
  • Step #1 preheat your trusty oven to 400F.
  • Step #2 Mix cherries, 1/4 c flour, 3/4 c sugar, 2 tsps orange peel & lemon juice in large bowl.
  • Step #3 Transfer mixture to 8-inch square glass baking dish.
  • Step #4 mix 1 1/2 c flour, butter, 2 tbsps sugar, 1 tsp peel, egg, orange juice & salt in processor.
  • Step #5 Using on/off turns, process until clumps form.
  • Step #6 Turn out onto floured surface to 11-inch square.
  • Step #7 Place atop filling.
  • Step #8 Fold edges over, forming double thick edge.
  • Step #9 Crimp edge.
  • Step #10 Sprinkle top with 1 tbsp sugar.
  • Step #11 Cut vents in crust to allow steam to escape.
  • Step #12 bake this until juices bubble & crust is golden, about 50 mins.
  • Step #13 Serve warm or at about room temp.
  • Step #14 Serves 8.
