Ingredients
1 3 lb broiler chicken; cut-up & skinned
Cherry tomatoes for garnish
1/2 c Basil; fresh, packed, coarsely sliced
1 cn Tomatoes; stewed
1/2 ts Sugar
1 tb Garlic; minced
1 lg Onion; sliced
1 lb Pasta of choice; cooked as directed
Basil sprigs for garnish
1 ts Rosemary; fresh, leaves only
1 lb Mushroom caps; small, stems removed
2 md Green peppers; sliced
1 ts Salt; or to taste
1/4 ts Black pepper; coarsely ground
1 Cap olives; small, black, pitted, drained
1/4 c Olive oil
1/2 c Parsley; minced
Directions
Step #1 Heat oil in a large frypan with a tight fitting lid (or a WOK).
Step #2 Add chicken breast halves, thighs, legs, & wings (end joint removed).
Step #3 Cook, over med-heat/flame, turning, until lightly browned.
Step #4 Remove chicken pieces & set aside, keeping warm.
Step #5 Add onion, peppers, for about 3 mins, and garlic to skillet & cook, stirring frequently, or until onions & softened.
Step #6 Add half the parsley, mushrooms, canned tomatoes, 1 c of the olives, & half the basil.
Step #7 Cook for 10 mins, stirring frequent ly.
Step #8 stir in the the sugar & remaining basil.
Step #9 Arrange Chicken pieces atop the sauce; Sprinkle top with the salt, pepper, & rosemary.
Step #10 Cover tightly, & cook over medium-low heat for 30 mins, or until chicken is very tender.
Step #11 Remove cores of the cherry tomatoes & insert the remaining black olives for garnish.
Step #12 Meanwhile, cook pasta according directions on package; drain.
Step #13 Remove chicken pieces from sauce, Toss pasta & sauce together.
Step #14 Turn onto a serving dish.
Step #15 Arrange chicken pieces atop pasta.
Step #16 Garnish with asil sprigs & olive stuffed cherry tomatoes.
Step #17 Serving Ideas : serve this with a loaf of crusty French bread.
