Chicken Hash Recipe

Ingredients
  • 1/4 ts Ground cumin
  • 1/4 ts Grated lime zest
  • 8 oz Skinless; boneless chicken breast
  • 1 tb sliced fresh cilantro
  • 1/4 ts Powdered dried oregano;
  • 1/8 ts Chili paste
  • 1/2 c sliced ripe avocado
  • 1 tb sliced roasted red pepper
  • 1 tb Fresh lime juice
  • 1 Plum tomato; seeded and sliced
  • 3 Regular-size corn muffins
  • Salt & freshly ground black pepper

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 Spice up the chicken breast with salt & pepper, place it in a 12-inch square of tinfoil, & fold edges in tight pleats to seal.
  • Step #3 Put the square on a baking sheet & cook it in the oven for about 35 mins.
  • Step #4 Remove the chicken from the foil & set it aside to cool.
  • Step #5 When cool, dice into 1/4-inch dice.
  • Step #6 mix the chicken, lime juice, tomato, avocado, red pepper, oregano, cilantro, lime zest, cumin, & chili paste in a bowl.
  • Step #7 Mix together carefully -- you do not want the mixture to turn to mush.
  • Step #8 Spice up to taste with salt & pepper.
  • Step #9 Cut each corn muffin horizontally into four 1/3-inch-thick slices.
  • Step #10 Cut a circle out of each muffin slice with a 1 1/2 inch-diameter cutter.
  • Step #11 Leaving the muffin in place, press the chicken guacamole into the top of the cutter, & carefully lift off the cutter.
  • Step #12 Repeat.
  • Step #13 Yield: 12 hors d'oeuvres.
