Chicken Satay Skewers With Mango And Cucumber Salsa Recipe

Ingredients
  • 3 lb Chicken -deboned
  • 1 2 1/2 cm piece fresh turmeric
  • 1/2 ts Powdered cinnamon
  • 8 Shallots
  • 1 ts Cummin
  • 1 ts Sugar
  • 1 Stalk lemon grass
  • 1 ts Coriander
  • Salt to taste

Directions
  • Step #1 Cube the chicken meat, drain & put aside.
  • Step #2 Grind coriander, peanuts, cummin, tummeric, salt & sugar.
  • Step #3 Mix this with the powdered cinnamon, sliced shallots & 1 tbsp cooking oil, marinate the chicken with this mixture.
  • Step #4 Using soaked bamboo skewers, thread meat on skewers.
  • Step #5 Gril over medium coals.
  • Step #6 Turn over & continue grilling until the chicken is cooked serve this with peanut sauce.
