Chicken With Mediterranean Vegetables Recipe

Ingredients
  • 1 tb Minced garlic
  • 1 lb; boneless, skinless chicken breast meat, cut into 1/2-inch dice
  • 2 c Peeled carrots; cut on the diagonal into 1/2-inch pieces
  • 1 Egg white
  • 3 tb Hoisin sauce
  • 4 Scallions; white & green parts thinly sliced
  • 1/3 c Vegetable oil
  • 1 c sliced macadamia nuts
  • 4 ts Cornstarch mixed with 3 tbsps water
  • 4 qt Salted water
  • 2 c Trimmed peeled asparagus; cut on the diagonal into 1/2 inch pieces
  • Salt

Directions
  • Step #1 Marinate the chicken in the egg white while you parboil the vegetables.
  • Step #2 Bring the water to a boil & add the carrots.
  • Step #3 Cover & bring the water back to a boil & cook for a min.
  • Step #4 Add the asparagus and boil for another min.
  • Step #5 Drain the vegetables, cool them in cold water & set aside.
  • Step #6 In a wok or large skillet, heat the vegetable oil.
  • Step #7 When very hot, add the chicken & stir-fry over high heat for 1 min or until the chicken is opaque.
  • Step #8 Add the garlic, carrots & asparagus & continue to stir-fry for 1 min more to heat the vegetables through and finish cooking the chicken.
  • Step #9 Add the scallions, macadamia nuts & hoisin sauce & stir-fry for 30 seconds Add the dissolved cornstarch & let simmer for 30 seconds.
  • Step #10 Spice up this with salt to taste.
