Ingredients
  • 2 c Basic Cooked Tomatillo Sauce
  • 1 lg Slic white onion
  • 1 Sprig epazote;
  • 1/3 c Queso fresco; dry cottage cheese or, farmer cheese
  • 1 1/2 c Vegetable oil
  • 8 Stale corn tortillas

Directions
  • Step #1 1.
  • Step #2 Heat the oil in a deep skillet or pot.
  • Step #3 Tear the tortillas & drop them into the hot oil.
  • Step #4 Cook stirring, until the tortillas are very crisp & their color is darker.
  • Step #5 Drain on paper towels.
  • Step #6 Drain the oil from the skillet.

  • Step #8 Return the tortillas to the skillet & add the sauce.
  • Step #9 Stir, then cook this until the tortillas have absorbed some sauce & have begun to get soft.
  • Step #10 A chewy tortilla texture is mandatory for all chilaquiles.

  • Step #12 Spoon onto plates & Sprinkle top with cheese.
  • Step #13 Top each with a few onion rings.
  • Step #14 If you really like spazote, chop a few leaves and Sprinkle top it over the onion slices.
