Chilled Green Tomato Soup Recipe

Ingredients
  • 200 g Caster sugar
  • 1 Piece fresh ginger; sliced
  • 2 Cinnamon sticks
  • 450 g Rhubarb; cleaned & cut into 2.5cm pieces
  • Grated zest & juice of 3 oranges
  • 500 ml Water

Directions
  • Step #1 Place the rhubarb in a saucepan with the water & sugar, add the cinnamon sticks & ginger & bring to the boil.
  • Step #2 Reduce the heat and simmer carefully for about 20 mins, or until the rhubarb is tender.
  • Step #3 Strain the rhubarb & set aside.
  • Step #4 Boil the cooking liquid to reduce until very syrupy.
  • Step #5 Add the orange zest & juice.
  • Step #6 Pour over the rhubarb & chill well before serving.
  • Step #7 serve this with thick Greek yoghurt & a shortbread biscuit.
