Step #1 Step 1: Marinade: mix & add 6 chicken thighs, let set overnight in fridge.
Step #2 Step 2: Cook thighs: Normally I would have done this on my weber but its been raining here off & on all day ssssooooo.

Step #7 I put them in the toaster oven at 300F F for 1 to 1 1/2 hr till done.
Step #8 Let cool.
Step #9 Step 3: Put 'em together: Remove bone & skin from thighs.
Step #10 (insert bad joke here) Slice 1/2 onion, 1/2 red bell pepper, 1 purira chile (it was the largest in my garden).
Step #11 Heat saute pan, red pepper, onion, add oil & heat then add chicken, & chile.
Step #12 While cooking mix 2 tbls soy sauce, 1 tsp hoisen sauce, 1 tsp sliced ginger, and another coule of drops of sesame oil.
Step #13 Once vegies are hot but not limp add soy sauce mix & stir quickly then remove this from heat.
Step #14 At this point I throw a 10" flour tortilla onto the open fire on my gas stove & toast lightly, remove & fill with shredded lettuce and chicken mixture roll 'em up then eat 'em up, yum.
