Chinese Sea Bass Recipe

Ingredients
  • Freshly-ground black pepper; to taste
  • 2 Potatoes; peeled & sliced 1/4-inch thick
  • Canola oil; to cook
  • 1 Red bell pepper; julienned
  • 1 lg Red onion; julienned
  • 2 c Shredded Cheddar cheese
  • Salt; to taste
  • 10 lg Eggs; beaten
  • 2 Lapchongs ; sliced 1/8" thick
  • 6 Scallions; sliced 1/8" thick

Directions
  • Step #1 Preheat an oven to 350 degrees.
  • Step #2 Coat a large, lapchong, hot oven-proof skillet (can be non-stick) with oil & saute potatoes, onions and peppers for about 6 mins.
  • Step #3 Add scallions & eggs & Spice up.
  • Step #4 Stir around for 30 seconds, top this with cheese then place this in the oven.
  • Step #5 Bake for 20 mins or until a knife inserted in the center comes out clean.
  • Step #6 If top is not brown & crusty, turn on broiler to brown the cheese, about 2 mins.
  • Step #7 Let rest 3 mins before slicing into pie wedges & serving.
