Chocolate Cream Puff Wreath Recipe

Ingredients
  • 2 c Vanilla wafer crumbs;
  • -FOR CRUST----
  • 3/4 Stick unsalted butter; melted
  • 1/3 c Sugar

Directions
  • Step #1 FOR FILLING--- 5 oz Fine-quality bittersweet -chocolate; sliced 4 oz Unsweetened chocolate; -sliced 1 c Sugar 1/2 c Cornstarch 3/4 ts Salt 6 lg Egg yolks 4 1/2 c Milk 3 tb Unsalted butter; cut into -bits and ; softened 1 1/2 ts Vanilla 1 c Well-chilled heavy cream 1 1/2 tb Sugar; or to taste Grated bittersweet chocolate -for garnish Make Crust: preheat your trusty oven to 350F.
  • Step #2 In a bowl stir this together crumbs, butter, & sugar & press on bottom & side of a 10-inch (1 1/2-quart) pie plate.
  • Step #3 Bake crust in middle of oven until crisp, 15 to 20 mins, & cool on a rack.
  • Step #4 Make filling: In a metal bowl set over barely simmering water melt chocolates, stirring, until smooth & remove bowl from heat.
  • Step #5 In a heavy saucepan (about 3 quarts) whisk together sugar, salt, & egg yolks until mixd well & add milk in a stream, cornstarch, whisking.
  • Step #6 Bring milk mixture to a boil over moderate heat, whisking, until thick, & let simmer, whisking, about 1 min.
  • Step #7 Force custard through a fine sieve into a bowl & whisk in melted chocolate, butter, & vanilla until smooth.
  • Step #8 Cover surface of filling with plastic wrap & cool completely.
  • Step #9 Pour filling into crust & chill pie, covered, at least 6 hrs or overnight.
  • Step #10 In a bowl with an electric mixer beat cream to soft peaks.
  • Step #11 Beat in sugar & beat cream just to stiff peaks.
  • Step #12 Spoon whipped cream decoratively onto pie & Sprinkle top with grated chocolate.
