Step #1 ---FUDGE------ 2 oz Unsalted butter 6 oz Extra bitter dark chocolate 5 fl Double cream 1 lb Icing sugar-TO FINISH---- 3 tb Apricot jam 1 tb Blanched almonds; (browned -under grill ; or in a non-stick ; pan) A few tiny chocolate eggs A dusting of icing sugar preheat your trusty oven to 150C/300F/gas 2.
Step #2 Grease 2 x 8 inch sandwich cake tins.
Step #3 Prepare cake.
Step #4 Sieve all dry ingredients together into a mixing bowl.
Step #5 Make a well in the centre.
Step #6 Beat the eggs & pour this into the bowl with syrup, milk & oil.
Step #7 Draw dry ingredients inwards from sides of bowl & beat into liquid ingredients to make a smooth batter.
Step #8 pour this into prepared tins & bake in the preheated oven for approximately 35 to 45 mins, until springy to touch & firm in the centre.
Step #9 Prepare fudge.
Step #10 Melt butter, chocolate & cream together in a double-boiler.
Step #11 Sieve icing sugar & slowly beat in to form a rich, glossy fudge topping.
Step #12 To serve, sandwich together with jam.
Step #13 Spread top & sides with fudge, swirling with a knife.
