Chocolate Peanut Squares Recipe

Ingredients
  • 1/2 c Peanut butter, chunky
  • 3 tb Peanuts, unsalted; finely sliced
  • 1 oz Chocolate, semi-sweet; melted & cooled
  • 1/2 c Sugar
  • 8 Egg whites; at room temp.

Directions
  • Step #1 Preheat overn to 450 F.
  • Step #2 Generously butter a 1-1/2 qt.
  • Step #3 souffle dish.
  • Step #4 Sprinkle top bottom & sides of dish with sliced peanuts.
  • Step #5 Place the peanut butter in a medium mixing bowl.
  • Step #6 In a large mixer bowl beat the egg whites with an electric mixer on medium-high speed till frothy.
  • Step #7 slowly add the sugar & beat on high speed till soft peaks form (tips curl).
  • Step #8 Stir abou 1 c of the beaten egg whites into peanut butter to lighten; stir peanut butter mixture into remaining beaten egg whites (be careful not to overmix).
  • Step #9 Turn into the prepared souffle dish.
  • Step #10 Drizzle melted chocolate atop souffle mixture.
  • Step #11 Run a knife through the mixture to create a marbled effect with the chocolate, being careful not to scrape peanuts from sides of the dish.
  • Step #12 Place souffle dish in cener of preheated oven & as soon as possible reduce temperature to 375 F.
  • Step #13 Bake for 20 to 25 mins or till a knife inserted near the center of the souffle comes out clean.
  • Step #14 Do not overbake.
  • Step #15 Serve the souffle as soon as possible, using 2 forks to carefully divide souffle into 6 to 8 portions.
  • Step #16 Makes 6 to 8 servings.
