Chop-chop Pork Chops Recipe

Ingredients
  • 2 Whole peeled garlic cloves
  • 200 g Sheeps' yoghurt
  • 4 tb Olive oil
  • Few sprigs of fresh thyme
  • 2 Salad onions; sliced
  • 350 g New potatoes; cut in half
  • Salt & pepper
  • 150 ml Red wine
  • 1 ds Balsamic vinegar
  • 1 Pinches ground cinnamon
  • 4 Pork loin chops; about 475g/1lb 1oz
  • 2 Sprigs fresh rosemary
  • 1 Pinches ground nutmeg; ginger & cinnamon
  • 1 bn Radishes
  • 150 g Broad beans; shelled
  • 1 1/2 tb sliced fresh mint
  • 1 1/2 tb Honey
  • 2 Mangoes

Directions
  • Step #1 preheat your trusty oven to 230c/450f/Gas 8.
  • Step #2 1 Cook the potatoes in a pan of boiling salted water until tender and drain.
  • Step #3 Cook the broad beans in a pan of boiling water for 2-3 mins.
  • Step #4 Drain the beans & mix with the potatoes.
  • Step #5 Slice half the radishes.
  • Step #6 2 Heat 1 tbsp olive oil in a saute pan, add the sliced salad onions & cook for a min.
  • Step #7 Add the beans, potatoes & sliced radishes, Sprinkle top it over a dash of balsamic vinegar & Spice up.
  • Step #8 Serve in a bowl.
  • Step #9 3 Using a sharp knife, cut down either side of the flat mango stones & remove 'pockets' of flesh.
  • Step #10 Use a knife to make a criss-cross pattern through the flesh, push upwards from below the skin & cut off squares of mango flesh.
  • Step #11 4 Mix with 100g/3 1/2oz yoghurt, 1/2 tbsp honey, pinch ground cinnamon & 1/2 tbsp sliced mint.
  • Step #12 Serve in a bowl.
  • Step #13 For the Radish Tzaziki: Grate the remaining radishes & mix into 100g/3 1/2oz yoghurt with 1 tbsp sliced mint.
  • Step #14 Spice up.
  • Step #15 5 Heat 1 tbsp olive oil in a griddle pan.
  • Step #16 Add 2 chops, thyme and garlic & cook the pork for 3-4 mins on each side, or until cooked through.
  • Step #17 6 remove this from the pan & allow the meat to rest for a few mins.
  • Step #18 Serve the chops with the radish tzaziki.
  • Step #19 7 Heat 2 tbsp olive oil in an ovenproof frying pan, ginger & cinnamon, add the remaining chops & Sprinkle top it over a pinch each of nutmeg, drizzle over 1 tbsp honey & add rosemary sprigs.
  • Step #20 8 Cook for three mins, transfer the pan to the oven & cook for 4-5 mins.
  • Step #21 After this time, pour the red wine into the pan and continue cooking for a further 3-4 mins, or until the pork is cooked through.
  • Step #22 Serve the pork with the rosemary sprigs.
