Chunky Coconut, Tomato, Cucumber And Lime Relish Recipe

Ingredients
  • 3 Scallions; sliced fine
  • 1/4 lb Bacon -; , sliced
  • 2 tb Finely-sliced fresh basil leaves
  • 1 ts Fresh lemon juice; or to taste
  • 3/4 ts Worcestershire sauce
  • 2 cn Minced clams -;
  • Pita toasts or chips; for serving
  • 1/3 c Finely-sliced red bell pepper
  • Hot pepper sauce; to taste
  • 1 ts Drained bottled horseradish
  • 8 oz Cream cheese; softened
  • 1/4 c Sour cream

Directions
  • Step #1 In a skillet cook bacon over moderate heat, stirring, until golden and crisp & transfer with a slotted spoon to paper towels to drain.
  • Step #2 In a large sieve set over a bowl drain clams, reserving clam juice, & in another bowl whisk together cream cheese & sour cream.
  • Step #3 Whisk 2 tbsps reserved clam juice into cream cheese mixture with clams, bacon, & remaining ingredients.
  • Step #4 Dip may be made 1 day ahead and chilled, covered.
  • Step #5 Bring dip to about room temp before serving.
  • Step #6 Serve dip with toasts or chips.
