Cincinnati Chili Recipe

Ingredients
  • 1 Celery stalk; chop fine
  • 1 Bay leaf
  • 1/3 c Bulgar wheat
  • 1 md Onion
  • 1 cn Tomato paste
  • 1/2 ts Paprika
  • 1 ts Salt
  • 1 md Carrot; chop fine
  • 2 cl Garlic; minced
  • 4 1/2 c -Water
  • 1/2 ts Black pepper
  • 1/4 ts Nutmeg
  • 1 ts Chili powder
  • 1/2 ts Oregano
  • 1/2 ts Cumin
  • 1/4 ts Allspice, ground
  • 1/4 ts Cloves
  • 1 ts Cinnamon

Directions
  • Step #1 In a heavy saucepan, celery, saute onion, & carrot (I use bassmatic vinegar).
  • Step #2 stir in the garlic & cook another min.
  • Step #3 Add water, tomato paste & spices.
  • Step #4 Bring to a boil, reduce heat & let simmer 30 min.
  • Step #5 Add bulgar wheat & cook another 30 min.
  • Step #6 Add more water if necessary.
  • Step #7 Remove bay leaf before serving.
  • Step #8 Serving suggestions: on spaghetti topped with chili & ff cheddar cheese, onions and/ or pinto beans.
  • Step #9 You could add other vegetables such as zucchini, peppers or onions, & top this with yogurt.
  • Step #10 Purists demand oyster crackers.
