Classic Roast Pork With Crackling And Cider Fondant Potat Recipe

Ingredients
  • 1 lb Firm tofu; pressed and crumbled
  • Salt & pepper to taste
  • 1 c Whole wheat bread crumbs
  • Hot sauce to taste
  • 1/3 c sliced walnuts
  • 1 tb Bragg's Amino Acid
  • 2 c Vegetable stock or water
  • 1/2 c Oats;
  • 2 tb Red wine or red wine vinegar
  • 1/4 lb Shiitake mushrooms; thinly sliced
  • 3 tb Tomato paste or ketchup
  • 3 tb Arrowroot
  • 1/2 c Bread crumbs or oats; to coat
  • 1 tb Olive oil
  • Cooking spray or oil
  • 3 tb Dijon-style mustard
  • 1 Onion; finely sliced
  • 3 Cloves garlic; minced

Directions
  • Step #1 Introduction: The combination of walnuts, tofu, & oats makes for a familiar yet unique taste resembling a traditional meat loaf.

  • Step #3 In a large skillet, saute onion in oil until softened, over med-heat/flame, about 5 mins.
  • Step #4 Just before onions are done, stir in the garlic, & continue to saut? until golden, about 5 more mins.
  • Step #5 Transfer to a large bowl & set aside.

  • Step #7 In the same skillet, toast walnuts, stirring often, until fragrant, about 3 mins.
  • Step #8 stir in the oats & mushrooms, & saut? until mushrooms soften, about 5 mins.

  • Step #11 Simmer rapidly 5 to 10 mins, to reduce liquid.
  • Step #12 When nearly dry, red wine, tomato paste, stir in the soy sauce, mustard, hot sauce, salt, and pepper.
  • Step #13 Continue cooking until mixture is thickened, then add to bowl with onions.

  • Step #15 Mix in tofu, arrowroot, & enough bread crumbs to make a sturdy mixture.
  • Step #16 Adjust Spice uping, with more soy sauce, tomato paste, if necessary, pepper, salt, or mustard.

  • Step #18 To make a loaf: preheat your trusty oven to 350?.
  • Step #19 Lightly spray or brush an 8-c loaf pan.
  • Step #20 Spoon mixture into prepared pan, pressing in firmly.
  • Step #21 Sprinkle top with some of the remaining crumbs or oats & press down, into top.
  • Step #22 Bake 40 mins, until loaf is firm & crust is browned.
  • Step #23 (For a crispy top, place a pan of hot water into oven with the loaf.
  • Step #24 ) Allow baked loaf to cool for an hr before slicing.
  • Step #25 To make burgers: Form mixture into 8 patties.
  • Step #26 Coat both sides lightly with oats or bread crumbs.
  • Step #27 Lightly spray or brush a nonstick skillet with oil, & saut? patties over med-heat/flame, until crisp and browned, 4 to 5 mins per side.
