Classic Sponge Cake (with Passion Fruit Filling) Recipe

Ingredients
  • Salt
  • 1 tb Finely sliced fresh parsley leaves
  • 1 c Freshly grated Parmigiano-Reggiano cheese
  • 4 lg Eggs; beaten
  • 1/2 lb Bacon; sliced
  • 1 tb sliced garlic
  • Freshly ground black pepper
  • 1 lb Fresh spaghetti; cooked al dente

Directions
  • Step #1 In a large saute pan, over med-heat/flame, cook the bacon until crispy, about 6 mins.
  • Step #2 Remove the bacon & drain on paper towels.
  • Step #3 Pour off all of the oil except for 3 tbsps.
  • Step #4 Add the garlic.
  • Step #5 Spice up this with black pepper.
  • Step #6 Saute for 30 seconds.
  • Step #7 Add the crispy bacon & the pasta.
  • Step #8 Saute for 1 min.
  • Step #9 Spice up the eggs with salt.
  • Step #10 Remove the pan from the heat & add the eggs, whisking quickly until the eggs thicken, but do not scramble.
  • Step #11 Add the cheese & re-Spice up this with salt & pepper.
  • Step #12 Mound into serving bowls & garnish with parsley.
  • Step #13 Yield: 4 servings.
