Coconut Bonbons Recipe

Ingredients
  • 1 1/2 c Semisweet chocolate chips
  • 2 lg Eggs
  • 2 ts Vanilla
  • 1 1/2 ts Double-acting baking powder
  • 2 c Sweetened flaked coconut; toasted & cooled
  • 1 1/2 c All-purpose flour
  • 1 1/2 Sticks unsalted butter; softened
  • 1 1/2 c Firmly packed light brown sugar
  • 1/2 ts Salt

Directions
  • Step #1 In a bowl with an electric mixer cream together the butter & the brown sugar, add the eggs, beating well after each addition, beating the mixture until it is light & fluffy, 1 at a time, & beat in the vanilla.
  • Step #2 In a small bowl whisk together the salt, & the flour, add the flour mixture to the butter mixture, the baking powder, & beat the batter until it is just mixd.
  • Step #3 stir in the the chocolate chips & the coconut, spread the batter evenly in a buttered and floured 13- by 9-inch baking pan, & bake it in the middle of a preheated 350F.
  • Step #4 oven for 25 to 30 mins, or until it begins to pull away from the sides of the pan & crumbs adhere to a tester.
  • Step #5 Let the mixture cool completely in the pan on a rack & cut it into squares.
  • Step #6 Makes about 32 blondies.
