Coconut-rum Roulade Recipe

Ingredients
  • 4 oz Flour
  • -FOR CREPES----
  • 1 oz Melted butter
  • 3 Eggs
  • 1/4 ts Salt
  • 2 Vanilla beans; scraped
  • 1 1/4 c Milk

Directions
  • Step #1 FOR FILLING--- 1/2 c Cream cheese 1/4 c Pureed banana 1 tb Godiva liqueur 1 tb Coconut milk Crepe: 1) mix all crepe ingredients in a bowl & whip with a wire whisk until smooth.
  • Step #2 2) Heat a non-stick saute pan & spray with a non-stick coating.
  • Step #3 3) Add just enough batter to evenly coat the bottom of the pan.
  • Step #4 4) Cook about 1 min until light brown, then flip over & cook the other side.
  • Step #5 Filling: 1) mix all ingredients & mix until smooth.
  • Step #6 2) Place 2 Tbsp of filling into the center of the crepe & fold.
  • Step #7 3) Heat in the oven or microwave just until warm & serve this with maple syrup & powdered sugar.
