Ingredients

  • 1/8 ts Dried thyme
  • sliced fresh fennel fronds
  • 5 Black peppercorns
  • 1 tb Extra-virgin olive oil
  • 1/2 c White wine vinegar
  • 1 c Dry white wine

Directions
  • Step #1 mix the first 11 ingredients in a large saucepan, & bring to a boil.
  • Step #2 Add swordfish; reduce heat, & let simmer for 5 mins.
  • Step #3 Spoon mixture into a shallow dish, & cool.
  • Step #4 stir in the olive oil; cover and chill at least 24 hrs.
