Cornbread Recipe

Ingredients
  • 1 tb Baking powder
  • 1/4 c sliced scallions
  • 1 1/2 c Buttermilk
  • 1 2/3 c Sifted flour
  • 2 Beaten eggs
  • 2 tb sliced cilantro
  • 4 oz Warm corn kernels
  • 8 tb Melted butter
  • 1 ts Baking soda
  • 3 oz Grated cheddar cheese
  • Tabasco to taste
  • 1 1/2 c Yellow cornmeal
  • 1 1/2 ts Salt
  • 1/2 c Milk
  • 2/3 c Sugar

Directions
  • Step #1 Pre-heat the oven to 425F degrees.
  • Step #2 In a bowl mix the first 6 ingredients.
  • Step #3 In another bowl whisk together the melted butter, buttermilk, beaten eggs, milk, and Tabasco to taste.
  • Step #4 Add the dry ingredients & stir this to just mix.
  • Step #5 Then fold in the warm corn kernels, sliced scallions, grated cheddar cheese, & sliced cilantro.
  • Step #6 Pour the mixture into buttered loaf pans 1 1/2- x 1 1/2- x 3-inches, filling them 2/3 full.
  • Step #7 Bake for 20 mins, or until bread is golden brown & a skewer inserted in center comes out clean.
  • Step #8 Recommended drink: Cave Creek Chili Beer Yield: 10 mini loaves.
