Cranberry Cupcakes With Maple Creamcheese Frosting Recipe

Ingredients
  • 1 ts Corn flour
  • 115 g Caster sugar;
  • 450 g Fresh cranberries;
  • 55 g Flaked almonds;
  • 1 ts Grated lemon rind
  • 300F ml Ruby port;
  • 75 g Sultanas;
  • Salt
  • 125 ml Fresh orange juice;
  • 1 tb Grated orange rind
  • 1 ts Lemon juice
  • 1 pn Ground cloves
  • 1 ts English mustard powder

Directions
  • Step #1 mix the cranberries, port, sugar & orange juice in a non-metallic saucepan over a medium heat for 8-10 mins.
  • Step #2 mix the cornflour, mustard, lemon juice & cloves with a little water to make a paste.
  • Step #3 Add the sultanas, almonds, orange & lemon rind.
  • Step #4 Simmer over a medium heat until thickened, about 5 mins.
  • Step #5 Spice up to taste & chill.
  • Step #6 This can be made up to a week in advance.
