Cranberry Muffins Recipe

Ingredients
  • 1/4 c Vegetable oil
  • 1 c Unprocessed bran
  • 1 Egg
  • 2 ts Lemon zest
  • 1/4 c Dark brown sugar
  • 1/2 ts Salt
  • 1 c Milk
  • 2 tb Molasses
  • 1 c Whole wheat flour
  • 1/4 c sliced almonds
  • 1 ts Baking soda
  • 1 c Fresh cranberries

Directions
  • Step #1 preheat your trusty oven to 375.
  • Step #2 Butter a 9-muffin pan.
  • Step #3 mix bran, flour, sugar, soda, salt, cranberries, almonds & zest in mixing bowl.
  • Step #4 stir this to mix.
  • Step #5 mix in another bowl milk, oil, molasses & egg.
  • Step #6 Stir milk mixture into dry mixture just until mixd - do not overmix.
  • Step #7 Fill muffin c about 2/3 full.
  • Step #8 Bake 15-20 mins until risen & lightly browned.
  • Step #9 Approximately 10-20 mins.
  • Step #10 Per serving (excluding unknown items): 1539 Calories; 88g Fat (50% calories from fat); 38g Protein; 164g Carbohydrate; 214mg Cholesterol; 2524 mg Sodium.
