Cranberry Orange Fat Free Muffins Recipe

Ingredients
  • 4 ts Skim milk
  • 3 Eggs
  • 2 ts Orange peel; grated
  • 1/4 c Almonds; sliced ; 1 c powdered sugar
  • 3 ts Baking powder sliced
  • 3 c All-purpose flour
  • 1/2 c Sugar
  • 1/4 c Margarine or butter
  • 1/2 c Brown sugar; firmly packed softened
  • 3/4 c Sweetened dried cranberries

Directions
  • Step #1 ---GLAZE------ 1/2 ts Orange peel; grated 1) Heat oven to 350F.
  • Step #2 Spray 1 large or 2 small cookie sheets with nonstick cooking spray.
  • Step #3 2) In large bowl, mix sugar, brown sugar & margarine; beat until well mixed.
  • Step #4 Add 2 tsp orange peel & eggs; beat well.
  • Step #5 Lightly sppon flour into measuring c; level off.
  • Step #6 stir in the flour and baking powder; mix well.
  • Step #7 stir in the cranberries & almonds.
  • Step #8 3) With spray-coated hands, shape dough into 3 rolls, about 7 inches long.
  • Step #9 Place rolls at least 3 inches apart on sprayed cookie sheet; flatten each to form 3/4 inch thick rectangle, about 3 inches wide & 7 inches long.
  • Step #10 4) bake this at 350F for 18-25 mins or until rectangles are light golden brown & centers are firm to the touch.
  • Step #11 Place rectangles on wire racks; cool 5 mins 5) Wipe cookie sheet clean.
  • Step #12 With serrated knife, cut each rectangle into 1/2 inch slices; place, cut side up, on the cookie sheet.
  • Step #13 6) bake this at 350F for 6-8 mins or until top surface is slightly dry.
  • Step #14 Turn cookies over; bake an extra 6-8 min or until top surface is slightly dry.
  • Step #15 Remove cookies from the sheets; cool completely on wire racks.
  • Step #16 7) In small bowl, mix all glaze ingredients, adding enough milk for desired drizzling consistency.
  • Step #17 Drizzle over cookies.
  • Step #18 let this stand until glaze is set.
  • Step #19 Store tightly covered.
