Cranberry, Pear And Chocolate Trifle With Pear Crisps Recipe

Ingredients
  • 1/3 c Sugar
  • 1/2 c sliced dried apricots
  • 1/8 ts Salt
  • 2 lb Onions; sliced thin
  • 1/4 c Water
  • 2 ts Minced garlic
  • 2 c Cranberries; picked over
  • 1/2 Stick unsalted butter;
  • 1/2 c Red wine vinegar

Directions
  • Step #1 In a skillet cook the onions & the sugar in the butter over moderate heat, add the garlic, stirring, and cook the mixture, stirring, until the onions are pale golden, for 1 min.
  • Step #2 stir in the the vinegar, the cranberries, the water, & the salt & cook the mixture, stirring for 10 to 15 mins, or until the berries have burst & are softened.
  • Step #3 stir in the the apricots & cook the confit for 1 min.
  • Step #4 The confit keeps, covered & chilled, for 2 weeks.
  • Step #5 Serve the confit warm or at about room temp.
  • Step #6 Yield: 3 1/2 c.
