Cranberry-jalapeno Relish Recipe

Ingredients
  • 3 c Sifted cake flour
  • 1 1/2 ts Orange extract
  • 2 ts Grated orange peel
  • 1 c Whole milk
  • 6 lg Eggs; separated
  • 1 1/2 ts Vanilla extract
  • 1/4 ts Salt
  • 3 1/2 c Sifted powdered sugar
  • Cranberry Glaze
  • 1/4 c Plain yogurt
  • 1 c Unsalted butter; room temperature
  • 2 1/2 ts Baking powder
  • Creamy Brown Sugar Frosting

Directions
  • Step #1 preheat your trusty oven to 350F.
  • Step #2 Butter & flour two 9-inch-diameter cake pans with 2-inch-high sides.
  • Step #3 Sift flour, baking powder & salt into medium bowl.
  • Step #4 Using electric mixer, beat butter in large bowl until creamy.
  • Step #5 slowly add sugar; beat until light & fluffy, every once in awhile scraping down sides of bowl.
  • Step #6 Add egg yolks 1 at a time, beating well after each addition.
  • Step #7 Beat in orange peel, vanilla extract & orange extract.
  • Step #8 Whisk milk & yogurt in small bowl to mix.
  • Step #9 Add dry ingredients to yolk mixture in 3 additions alternately with milk mixture in 2 additions, beating well after each addition.
  • Step #10 Using clean dry beaters, beat egg whites in another large bowl until stiff but not dry.
  • Step #11 Fold 1/3 of whites into batter, then fold in remaining whites.
  • Step #12 Divide batter between pans.
  • Step #13 Smooth tops.
  • Step #14 Bake cakes until tester inserted into center comes out clean, about 35 mins.
  • Step #15 Cool cakes in pans on rack 15 mins.
  • Step #16 Run small knife around sides of pans to loosen cakes.
  • Step #17 Turn cakes out onto racks & cool completely.
  • Step #18 (Can be made 1 day ahead.
  • Step #19 Wrap in plastic & store at room temperature.
  • Step #20 ) Place 1 cake layer, flat side up, on platter.
  • Step #21 Spread top of cake with 3/4 c Creamy Brown Sugar Frosting.
  • Step #22 Spread 1 c Cranberry Glaze over frosting, leaving 1/2-inch border all around cake.
  • Step #23 top this with second cake layer, flat side down; press slightly to adhere.
  • Step #24 Spread 2 c frosting over sides of cake.
  • Step #25 Spoon remaining frosting into pastry bag fitted with medium-size star tip.
  • Step #26 Pipe decorative border around top edge of cake.
  • Step #27 put in the fridge until frosting is firm, about 1 hr.
  • Step #28 Spread remaining Cranberry Glaze over top center of cake.
  • Step #29 Chill until glaze is set.
  • Step #30 (Can be made 1 day ahead.
  • Step #31 Cover with cake dome and put in the fridge.
  • Step #32 ) Makes 12 servings.
