Crawfish Pie Recipe

Ingredients
  • 1/2 Recipe Basic Savory Pie Crust; see Note
  • 1 lb Crawfish tails
  • 4 tb Butter -;
  • 2 tb sliced parsley
  • 1 c sliced onions
  • 1 1/2 ts Salt
  • 1/2 c sliced; seeded, peeled tomatoes
  • 1/2 c sliced celery
  • 1/4 ts Freshly-ground black pepper
  • 2 tb Flour
  • 1 c Water
  • 1/2 ts Cayenne pepper
  • 1/2 c sliced bell peppers

Directions
  • Step #1 Note: See the ?Basic Savory Pie Crust? recipe which is included in this collection.
  • Step #2 Preheat the oven to 400F degrees.
  • Step #3 Melt the butter in a large skillet over medium-high heat.
  • Step #4 Add the onions, salt, bell peppers, celery, cayenne, & black pepper.
  • Step #5 Saute for about 8 mins, or until golden & wilted.
  • Step #6 Add the tomatoes & cook for about 6 mins, stirring every once in awhile.
  • Step #7 Add the crawfish tails & parsley.
  • Step #8 Cook, stirring every once in awhile, for about 4 mins.
  • Step #9 Dissolve the flour in the water & add to the pan.
  • Step #10 Stir for about 2 mins, or until the mixture thickens.
  • Step #11 remove this from the heat.
  • Step #12 Let cool for at least 30 mins.
  • Step #13 Place the Basic Savory Pie Crust in the bottom of a 9-inch pie pan & crimp the edges.
  • Step #14 Pour the crawfish mixture into the pie crust.
  • Step #15 Place the pie on a baking sheet & bake for about 45 mins, or until the edges of the pie crust are golden.
  • Step #16 Cool for several mins.
  • Step #17 Cut into wedges to serve.
  • Step #18 This recipe yields one 9-inch pie; 6 servings.
