Creamy Scrambled Eggs With Crispy Potatoes Recipe

Ingredients
  • 1 tb Oil
  • 375 g Small leeks; diagonally sliced
  • 50 g Plain flour;
  • 3 tb Freshly sliced parsley and sage
  • Salt & freshly ground black pepper
  • 500 g Herbed sausages;
  • 500 g Potatoes; peeled, grated and squeezed dry
  • 50 g Onion; grated & squeezed dry
  • 125 g Button mushrooms; sliced
  • 1 ts Cornflour; mixed in a little water
  • 1 200 millilit creme fraiche

Directions
  • Step #1 1.
  • Step #2 Grill the sausages following instructions on the pack.
  • Step #3 2.
  • Step #4 Heat the oil, add the leeks & mushrooms & cook for 5-6 mins, stirring every once in awhile.
  • Step #5 stir in the the creme fraiche, mixed cornflour, most of the parsley & sage.
  • Step #6 Add Spice uping to taste.
  • Step #7 3.
  • Step #8 remove this from the heat & when the sausages are cooked, cut each into 3-4 pieces & add to the leek mixture.
  • Step #9 4.
  • Step #10 Mix together the grated potato & onion & Spice uping to taste & with well floured hands shape into 8 flat rounds & coat with flour.
  • Step #11 5.
  • Step #12 Heat a little oil in a frying pan & fry the potato & onion rostis for 4-5 mins each side until crisp & golden.
  • Step #13 Drain on kitchen paper.
  • Step #14 6.
  • Step #15 Heat through the sausage mixture & serve this with the rostis, Sprinkle topd with the remaining sliced parsley & sage.
