Crispy Fish With Sweet-and-sour Sauce Recipe

Ingredients
  • 1 tb sliced garlic
  • 1 c Flour
  • 1/4 c Vegetable oil
  • 1 tb Cornstarch
  • & carcass reserved
  • 1 Whole Flounder - ; filleted,
  • 2 c Chicken stock
  • 2 ts Finely-sliced parsley leaves
  • Freshly-ground black pepper; to taste
  • 2 oz Dried wooded ear mushrooms; soaked in warm
  • Water for 30 mins; and drained
  • Salt; to taste
  • 1/4 c Minced shallots

Directions
  • Step #1 Rinse & pat dry the reserved fish carcass, set aside.
  • Step #2 Preheat the fryer.
  • Step #3 Spice up the flour with salt & pepper.
  • Step #4 Dredge the carcass in the Spice uped flour, on both sides, reserving the flour.
  • Step #5 Shake off any excess flour.
  • Step #6 Fry the carcass until golden brown, about 2 to 3 mins.
  • Step #7 remove this from the oil & drain on paper towels.
  • Step #8 Spice up this with salt & pepper.
  • Step #9 Cut the fillets into 2-oz pieces.
  • Step #10 Spice up this with salt & pepper.
  • Step #11 Dredge the fillets in the reserved flour, coating completely.
  • Step #12 In a large saute pan, over medium-high heat, heat the oil.
  • Step #13 When the oil is hot, but not smoking, lightly pan-fry the fish for 1 min on each side.
  • Step #14 remove this from the pan & set aside.
  • Step #15 In the same saute pan, add the shallots & garlic.
  • Step #16 Spice up this with salt and pepper.
  • Step #17 Saute for 1 min.
  • Step #18 Add the mushrooms.
  • Step #19 Spice up this with salt and pepper.
  • Step #20 Saute for 1 min.
  • Step #21 Add 1 3/4 c of the chicken stock.
  • Step #22 Dissolve the cornstarch in the remaining stock, making a slurry.
  • Step #23 Bring the stock to a boil.
  • Step #24 stir in the the slurry.
  • Step #25 Boil the liquid for 2 mins & then reduce to a simmer.
  • Step #26 Add the fish fillets & let simmer for 3 to 4 mins.
  • Step #27 ReSpice up & stir in the the parsley.
  • Step #28 To assemble, place the fried fish carcass on a large platter.
  • Step #29 Lay the fillets over the crispy bone.
  • Step #30 Spoon the sauce over the fillets.
  • Step #31 Serve as soon as possible.
  • Step #32 This recipe yields 2 servings.
