Asparagus, Roasted Garlic, And Lemon Garlic Recipe

Ingredients
  • 1 lg Continental cucumber; sliced
  • 6 Spring onions; finely sliced
  • 2 c Long grain rice
  • 2 tb Fresh sliced parsley
  • 2 tb White vinegar
  • 3 tb Dijon mustard
  • 4 tb Olive oil
  • 900 ml Water
  • 1 kg Asparagus; trimmed of woody stems
  • 2 tb Fresh sliced dill
  • 1 ts Dry mustard
  • 1 tb Sugar

Directions
  • Step #1 Heat the water to boiling in a large pot, adding salt to taste.
  • Step #2 Meanwhile, rinse the rice in a colander or sieve until the water runs clear.
  • Step #3 Add the rice to the boiling water.
  • Step #4 Cover the pan & reduce the heat to low, allowing the rice to simmer for 20 mins or until the water has all been absorbed.
  • Step #5 Fluff the rice up with a fork and set aside.
  • Step #6 Steam, microwave or boil the asparagus until just tender & bright green, about 2 mins then refresh the asparagus under cold water.
  • Step #7 Set aside.
  • Step #8 Whisk together the mustard, sugar, dry mustard & oil until the mixture is thick, vinegar, adding salt & pepper to taste.
  • Step #9 Add the asparagus, sliced cucumber & spring onions to the rice and toss well.
  • Step #10 Add the dressing & herbs then toss thoroughly until all the ingredients are well mixed.
  • Step #11 Serve on assorted lettuce leaves if desired.
